Slice the mushrooms thinly, shred the carrot and dice the pepper. Heat up the oil in a pan and add the mushroom slices, shredded carrot and diced pepper.
Add the crushed garlic to the vegetables and fry with the thyme for 3-5 minutes, or until the mushrooms begin to colour. Spread the cream cheese over the bread and add the salami. Tip the mushroom mix onto the salami and top it off with the mozzarella. Add the second slice of bread, press the two halves together and put the whole thing in a sandwich toaster for 3-4 minutes, or until the cheese has melted and the bread has a nice colour. Serve with rocket leaves.
